15-Minute Tortellini Soup
Ingredients
- Olive oil
- Garlic (fresh, jarred, or frozen)
- Italian seasoning or dried oregano
- Low-sodium chicken or vegetable broth
- Petite diced tomatoes (canned, with liquid)
- Refrigerated tortellini (cheese or spinach-filled)
- Baby spinach (optional)
- Salt and black pepper (to taste)
- Parmesan cheese, red pepper flakes, fresh parsley or basil (for serving)
Instructions
- Heat olive oil in a medium soup pot over medium heat.
- Sauté the garlic until fragrant, then stir in the Italian seasoning.
- Pour in the broth and canned tomatoes, and bring the mixture to a boil.
- Add the tortellini and cook according to the package instructions (usually 5-7 minutes).
- In the last minute of cooking, stir in baby spinach (if using) and let it wilt.
- Taste and adjust seasoning with salt and black pepper.
- Serve hot, garnished with Parmesan cheese, red pepper flakes, and fresh herbs if desired.
