  • Italian seasoning or dried oregano
  • Low-sodium chicken or vegetable broth
  • Petite diced tomatoes (canned, with liquid)
  • Refrigerated tortellini (cheese or spinach-filled)

  • Parmesan cheese, red pepper flakes, fresh parsley or basil (for serving)

Instructions

  • Heat olive oil in a medium soup pot over medium heat.
  • Sauté the garlic until fragrant, then stir in the Italian seasoning.
  • Pour in the broth and canned tomatoes, and bring the mixture to a boil.
  • Add the tortellini and cook according to the package instructions (usually 5-7 minutes).
  • In the last minute of cooking, stir in baby spinach (if using) and let it wilt.
  • Taste and adjust seasoning with salt and black pepper.
  • Serve hot, garnished with Parmesan cheese, red pepper flakes, and fresh herbs if desired.

Notes

  • Add Protein: Stir in cooked sausage, shredded chicken, or pancetta for a more filling meal.
  • Make it Vegetarian: Use vegetable broth and add canned beans for an extra protein boost.
  • Swap the Greens: You can use kale, Swiss chard, or escarole instead of spinach for variety.
