Ingredients

3 ripe bananas, mashed

2 cups almond flour

3 large eggs

½ cup honey or maple syrup

1 tsp baking soda

1 tsp vanilla extract

½ tsp salt

Optional: ½ cup chopped walnuts or chocolate chips


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

  • In a large bowl, whisk together mashed bananas, eggs, honey/maple syrup, and vanilla extract.

  • In a separate bowl, combine almond flour, baking soda, and salt.

  • Gradually stir dry ingredients into wet until just combined.

  • Fold in walnuts or chocolate chips, if using.

  • Pour batter into prepared pan and smooth the top.

  • Bake 45–50 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For nut-free: substitute almond flour with sunflower seed flour.

Add cinnamon or nutmeg for extra warmth.

Vegan version: use flax eggs (1 tbsp flax + 2.5 tbsp water per egg).

Add-ins like berries, coconut, or protein powder work well.

Store at room temp for 3 days, in the fridge for 1 week, or freeze for 3 months.
