Rustic Apple Pie combines a buttery, flaky crust with a spiced Honeycrisp apple filling sweetened with maple sugar. Perfectly balanced and aromatic, this timeless dessert is a comforting centerpiece for holidays or family dinners.
Ingredients
For the Crust:
- 2½ cups organic unbleached flour
- 1 cup (2 sticks) grass-fed cultured butter, cold and cubed
- ½ teaspoon salt
- 6–8 tablespoons ice water
For the Filling:
- 6 Honeycrisp apples, peeled, cored, and thinly sliced
- ¾ cup maple sugar (or brown sugar as a substitute)
- 1 teaspoon freshly ground nutmeg
- 1 tablespoon lemon juice
Instructions
- Prepare the Crust:
- In a large mixing bowl, combine flour and salt.
- Add cold butter and work it into the flour using your fingertips or a pastry cutter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing just until the dough holds together.
- Divide dough into two disks, wrap in plastic wrap, and chill for at least 30 minutes.
- Prepare the Filling:
- In a large bowl, toss sliced apples with maple sugar, nutmeg, and lemon juice. Set aside to release juices while the crust chills.
- Assemble the Pie:
- Preheat oven to 375°F (190°C).
- Roll out one dough disk on a floured surface and fit it into a 9-inch pie dish. Trim excess dough, leaving a slight overhang.
- Fill the crust with the apple mixture, layering evenly.
- Roll out the second dough disk and cut into strips for a lattice pattern or place it over the apples as a full crust. Seal and crimp the edges.
- Bake:
- Place the pie on a baking sheet to catch drips. Bake for 1 hour 30 minutes, or until the crust is golden brown and the filling bubbles at the edges.
- If the edges brown too quickly, cover them with foil or a pie shield.
- Cool and Serve:
- Let the pie cool for at least 30 minutes before slicing to allow the filling to set. Serve warm with vanilla ice cream or whipped cream.
