Ingredients
5 bone-in, skin-on chicken thighs
Salt and black pepper, to taste
1 tablespoon olive oil
1/4 cup butter
5 cloves garlic, crushed
Fresh parsley, chopped (for garnish)

Preheat the oven to 400°F (200°C) and move the oven rack to the center.

Pat the chicken thighs dry with a paper towel and season both sides with salt and black pepper.

Heat olive oil in a 10-inch cast iron skillet over medium heat. Place the chicken thighs skin-side down and cook for about 5 minutes until the skin is golden and crispy.

Flip the chicken thighs over. If there’s excess fat in the pan, spoon it out.
