Ingredients

5 bone-in, skin-on chicken thighs

Salt and black pepper, to taste

1 tablespoon olive oil

1/4 cup butter

5 cloves garlic, crushed

Fresh parsley, chopped (for garnish)


Instructions

  • Preheat the oven to 400°F (200°C) and move the oven rack to the center.

  • Pat the chicken thighs dry with a paper towel and season both sides with salt and black pepper.

  • Heat olive oil in a 10-inch cast iron skillet over medium heat. Place the chicken thighs skin-side down and cook for about 5 minutes until the skin is golden and crispy.

  • Flip the chicken thighs over. If there’s excess fat in the pan, spoon it out.

  • Add butter to the pan, and once melted, add the crushed garlic. Stir for 30 seconds to infuse the butter with garlic flavor.

  • Transfer the skillet to the oven and bake for about 30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

  • Garnish with freshly chopped parsley and serve.

Notes

Swap chicken thighs for breasts if desired, but they will cook faster.

Add lemon zest or a squeeze of fresh lemon juice for extra brightness.

Include fresh herbs like rosemary or thyme for a deeper flavor.
