These Baked Zucchini Spears are the perfect healthy side dish or snack. Coated in garlic, oregano, and Parmesan cheese, they’re baked to crispy perfection, offering a savory bite with a tender interior. Ready in just 20 minutes, these zucchini spears are a nutritious, customizable addition to any meal.

Ingredients

  • 2 medium-sized zucchinis
  • 2 cloves garlic, peeled and minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  • Preheat the Oven:

    • Set the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Prepare the Zucchini:

    • Wash the zucchinis thoroughly. Cut each zucchini in half lengthwise, then cut each half into quarters to create 8 spears.
  • Season the Zucchini:

    • In a small bowl, mix the minced garlic with olive oil. Brush this mixture evenly over each zucchini spear.
  • Add Seasonings:

    • Sprinkle the zucchini spears with dried oregano, salt, and black pepper.
  • Add Parmesan:

    • Generously sprinkle the freshly grated Parmesan cheese over the seasoned zucchini spears.
  • Bake:

    • Place the prepared zucchini spears on the baking sheet and bake for 15 minutes, or until they are tender.
  • Broil:

    • Switch the oven to broil and cook for an additional 3-4 minutes, or until the Parmesan cheese is golden brown and bubbly.
  • Serve:

    • Remove from the oven and serve warm.

Notes

  • Spicy Kick: Add a pinch of red pepper flakes to the seasoning mix for a spicy twist.
  • Herb Substitutions: Swap dried oregano for other herbs like thyme, basil, or rosemary for a new flavor.
  • Cheese Alternatives: Use Pecorino Romano or a dairy-free cheese if preferred.
  • Breadcrumbs: For extra crunch, sprinkle panko breadcrumbs on top before baking.
