Description

This moist and flavorful banana walnut bread is made with ripe bananas, Greek yogurt, and crunchy walnuts, offering a healthier twist on traditional banana bread. With a soft, fluffy interior and golden-brown exterior, it’s perfect for breakfast, a snack, or even as a lunchbox treat. Simple to make with pantry staples, this recipe will quickly become a family favorite.

Ingredients

1 ½ cups all-purpose flour

½ teaspoon salt

1 ½ teaspoons baking soda

2 eggs (at room temperature)

2 ripe bananas, mashed

½ cup Greek yogurt

¼ cup agave syrup

¼ cup light brown sugar

½ cup walnuts (or other nuts like almonds or pecans)

Instructions

  • Preheat the Oven: Preheat the oven to 355°F (180°C) and grease a loaf pan with non-stick spray.

  • Prepare Dry Ingredients: In a bowl, combine the flour and salt, and set aside.

  • Mix Wet Ingredients: In another bowl, mash the bananas and mix with eggs, yogurt, agave syrup, and brown sugar until well combined.

  • Combine Wet and Dry Ingredients: Add the baking soda to the banana mixture, then gently fold in the dry ingredients. Stir lightly, being careful not to overmix.

  • Add Walnuts: Fold in the crushed walnuts, then pour the batter into the prepared loaf pan. Top with additional walnuts if desired.

  • Bake: Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

  • Cool: Let the bread cool before slicing and serving.

Notes

Nut Variations: Substitute walnuts with almonds, pecans, or hazelnuts for a different flavor profile.

Vegan Option: Use flax eggs in place of regular eggs and opt for dairy-free yogurt to make this banana bread vegan.

Additional Flavor: For extra flavor, you can add chocolate chips, dried fruit, or a dash of cinnamon to the batter.
