Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

BBQ sauce (your favorite brand)

1 fresh pineapple, sliced into thin rings

Flour tortillas (medium size)

1 cup shredded Monterey Jack cheese

Jalapeño slices (optional, for extra heat)

Nonstick cooking spray


Instructions

  1. Grill the pineapple and chicken: Preheat your grill or skillet over medium heat. Skewer pineapple slices and grill until caramelized, about 2-3 minutes per side. Remove from heat and chop into bite-sized pieces. Season chicken breasts with salt and pepper, grill for 6-8 minutes per side, and brush with BBQ sauce during the last minute. Slice the chicken into thin strips.

  2. Prepare the quesadillas: Spray a griddle or skillet with nonstick spray and heat over medium heat. Place a tortilla in the skillet and layer with 1/2 cup cheese, sliced chicken, pineapple chunks, and jalapeño slices (if using). Drizzle a bit more BBQ sauce on top and add another tortilla to close the quesadilla.
