Description

Ingredients

1 lb ground beef

1 small onion, diced

2 garlic cloves, minced

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

1/2 cup shredded cheddar cheese (or your preferred cheese)

1/4 cup cilantro, chopped (optional)

1 package empanada dough (store-bought or homemade)

1 egg, beaten (for egg wash)


Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  • Add the diced onion and minced garlic to the skillet and sauté for 3-4 minutes, until the onion is softened.

  • Stir in the cumin, smoked paprika, chili powder, salt, and pepper. Cook for an additional 2 minutes.

  • Remove the skillet from the heat and let the beef mixture cool slightly. Stir in the shredded cheddar cheese and chopped cilantro (if using).

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • Roll out the empanada dough and cut into 4-5 inch circles.

  • Spoon the beef and cheese mixture onto each dough circle.

  • Fold the dough over to create a half-moon shape and press the edges together to seal. Crimp with a fork.

  • Brush with beaten egg for a golden finish.

  • Bake for 20-25 minutes or until golden and crispy.

  • Let cool slightly before serving.

Notes

You can swap ground beef for ground chicken, turkey, or black beans for a vegetarian option.

Add chopped jalapeños for a spicier version or use mozzarella or Monterey Jack for different cheese flavors.

Customize the filling by adding vegetables like bell peppers, mushrooms, or spinach.
