Description

These Berry Cheesecake Bars feature a buttery graham cracker crust, creamy cheesecake filling, and a swirl of fresh mixed berries. This no-fuss dessert is easy to prepare, make-ahead friendly, and perfect for holidays or casual gatherings.


Ingredients

Topping:

1 cup raspberries

1 cup diced strawberries

1 cup blueberries

½ cup granulated sugar

¼ cup lemon juice

1 teaspoon cornstarch

Crust:

2 cups graham cracker crumbs (about 18 crackers)

1 cup granulated sugar

¾ cup unsalted butter, melted

Filling:

24 oz cream cheese, room temperature

¼ cup sour cream

1 tablespoon vanilla extract

3 large eggs

¼ cup all-purpose flour

1 teaspoon baking powder


Instructions

  • Preheat oven to 325°F (163°C). Grease a 9×13-inch pan.

  • Prepare topping: Simmer berries, sugar, and lemon juice for 10 minutes until reduced. Stir in cornstarch and cool.

  • Make crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes.

  • Make filling: Beat cream cheese until smooth. Add sour cream, vanilla, eggs (one at a time), flour, and baking powder. Mix until just combined.

  • Assemble: Pour filling over crust. Dollop and swirl berry topping over the surface.

  • Bake: Place pan in a larger water bath pan. Bake for 60–70 minutes, until just set.

  • Cool: Let cool to room temp, then refrigerate for at least 4 hours before slicing.

Notes

Use frozen berries if needed—just thaw and drain well.

Don’t skip chilling; it improves texture and makes slicing easier.

Add lemon zest to the filling for brightness.

Store in fridge; best served cold.
