Description

Blueberry Fluffy Cottage Cheese Cloud Bread is a light, fluffy, and low-carb bread alternative that’s perfect for breakfast, snacks, or sandwiches. Made with whipped egg whites, creamy cottage cheese, and a touch of honey, this cloud bread is not only gluten-free but also rich in protein. Add fresh or frozen blueberries for a sweet, fruity twist. This simple recipe yields a soft, pillowy texture and is an ideal choice for anyone looking for a healthy, low-carb bread substitute.

Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese, blended until smooth
  • ¼ teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
  • 1 teaspoon honey or a pinch of sweetener

Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk the egg whites with the cream of tartar until stiff peaks form.
  • In another bowl, combine the egg yolks, blended cottage cheese, salt, cornstarch or arrowroot powder (if using), and honey or sweetener. Mix until smooth.
  • Gently fold the egg whites into the egg yolk mixture, being careful not to deflate the whipped egg whites.
  • Spoon the batter onto the prepared baking sheet, forming 6 to 8 mounds.
  • Bake for 20-25 minutes or until the cloud bread is golden and firm to the touch.
  • Allow to cool before serving.

Notes

  • Add Blueberries: For a fruity variation, fold fresh or frozen blueberries into the batter before baking.
  • Herbs or Spices: Customize the flavor with garlic powder, onion powder, or your favorite herbs for a savory option.
  • Sweetened Versions: Increase the honey or use stevia, monk fruit, or another sweetener for a sweeter cloud bread.
