Ingredients
- 3 large eggs, separated
- ½ cup cottage cheese, blended until smooth
- ¼ teaspoon cream of tartar
- ½ teaspoon salt
- 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
- 1 teaspoon honey or a pinch of sweetener
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk the egg whites with the cream of tartar until stiff peaks form.
- In another bowl, combine the egg yolks, blended cottage cheese, salt, cornstarch or arrowroot powder (if using), and honey or sweetener. Mix until smooth.
- Gently fold the egg whites into the egg yolk mixture, being careful not to deflate the whipped egg whites.
- Spoon the batter onto the prepared baking sheet, forming 6 to 8 mounds.
- Bake for 20-25 minutes or until the cloud bread is golden and firm to the touch.
- Allow to cool before serving.
Notes
- Add Blueberries: For a fruity variation, fold fresh or frozen blueberries into the batter before baking.
- Herbs or Spices: Customize the flavor with garlic powder, onion powder, or your favorite herbs for a savory option.
- Sweetened Versions: Increase the honey or use stevia, monk fruit, or another sweetener for a sweeter cloud bread.
