Description

This Broccoli Apple Salad with Maple Dijon Dressing combines crunchy broccoli, sweet apples, and tangy dressing, making it a delightful and nutritious side dish or light meal. Topped with dried cranberries and toasted slivered almonds, it’s a perfect balance of flavors and textures that will impress at any occasion.

Ingredients

For the Salad:

4 cups broccoli, cut into bite-sized pieces

1 apple, thinly sliced

1 carrot, grated

¼ cup scallions, thinly sliced

¼ cup dried cranberries

⅓ cup slivered almonds, toasted

For the Dressing:

⅓ cup olive oil

1 lemon, juiced

1 tablespoon dijon mustard

1 tablespoon maple syrup

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

Instructions

  • Prepare the Salad: In a large bowl, combine the broccoli, thinly sliced apple, grated carrot, sliced scallions, dried cranberries, and toasted slivered almonds.

  • Make the Dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, dijon mustard, maple syrup, garlic powder, onion powder, salt, and black pepper until smooth and well combined.

  • Assemble the Salad: Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

  • Serve: Serve immediately, or let the salad sit for a few minutes to allow the flavors to meld. It’s also great after chilling in the fridge for 10-15 minutes for a cool, refreshing dish.

Notes

Add protein: For a more filling meal, add grilled chicken, chickpeas, or hard-boiled eggs to the salad.

Add more nuts: If you like more crunch, use walnuts or pecans in place of or in addition to slivered almonds.

Spicy kick: Add a pinch of red pepper flakes to the dressing for some heat.

Vegan option: This recipe is already vegan, but you can swap the maple syrup for agave nectar if preferred.
