Ingredients

4 hard-boiled eggs

1 small beetroot (for noses and eyes)

Edible marker pens (for drawing eyes)

1 cucumber

1 purple carrot

1 orange carrot

1 bunch of lettuce

1 bunch of rocket

1 bunch of watercress

1 bunch of baby spinach

Blueberries (for decoration)


Instructions

  • Hard-boil the eggs and cool them in cold water. Peel and cut the eggs into rabbit shapes with a sharp knife.

  • Draw eyes on the eggs using edible marker pens. Cut small pieces of beetroot for noses.

  • Use mini bento cutters to slice the cucumber and carrots into fun shapes.

  • Arrange lettuce, rocket, watercress, and spinach on a large platter.

  • Add the vegetable flowers and place the egg rabbits on top.

  • Garnish with blueberries for extra fun and color.

Notes

If you don’t have mini bento cutters, use a sharp knife to carve the vegetables into flower shapes.

For added sweetness, you can swap some of the salad greens with fruits like strawberries or grapes.
