Description

This elegant Burrata Salad with Balsamic Glaze features creamy burrata, shaved asparagus, cherry tomatoes, blackberries, and arugula, all drizzled with a sugar-free white balsamic reduction. A fresh, vibrant salad perfect for spring gatherings, Mother’s Day, or light entertaining.

Ingredients

2 burrata

½ cup white balsamic vinegar

½ cup cherry tomatoes, sliced

46 asparagus stalks (shaved)

3 oz arugula

½ cup blackberries

1 tbsp pepitas (pumpkin seeds)

Olive oil (for drizzling)

Instructions

Make the balsamic glaze: Simmer ½ cup white balsamic vinegar over medium-low heat for 12–15 minutes, swirling occasionally. Remove from heat when bubbly and let cool.

Notes

Cheese Swap: Use mozzarella or ricotta if burrata isn’t available.

Fruit Variations: Try blueberries or raspberries instead of blackberries.

Seed/Nut Options: Sub with pistachios, almonds, or pine nuts.

Greens Swap: Spinach or mixed greens work beautifully in place of arugula.

Make-Ahead: Prep glaze and ingredients separately; assemble fresh before serving.
