Ingredients

For the Pretzel Bites:

  • 1½ cups warm milk (110-115°F)
  • 1 tablespoon brown sugar
  • 1 package (0.25 oz) active dry yeast
  • 4½ cups all-purpose flour
  • 2 tablespoons melted butter, plus more for brushing
  • 1 teaspoon fine sea salt
  • 9 cups water
  • ⅓ cup baking soda
  • 1 large egg (with 1 tablespoon water)
  • Coarse salt for topping

Instructions

  • Activate the Yeast: Combine warm milk and sugar in a bowl, then sprinkle yeast over it. Let sit for 5 minutes until foamy.
  • Make the Dough: Add flour, melted butter, and salt to the yeast mixture. Knead until smooth, about 5-7 minutes. Let dough rise for 20 minutes.
  • Shape the Pretzel Bites: Preheat oven to 450°F. Roll dough into a log, then cut it into small bite-sized pieces.
  • Prepare the Baking Soda Bath: Boil water and add baking soda. Drop dough pieces into the water for 30 seconds, then remove and place on a baking sheet.
  • Egg Wash & Bake: Brush bites with an egg wash (egg mixed with water) and sprinkle with coarse salt. Bake for 12-15 minutes, or until golden brown.
  • Serve: Brush with melted butter and serve warm.
