Ingredients

2 teaspoons olive oil

Salt and pepper to taste

1 pound ground beef (90% lean)

1 onion, finely diced

2 teaspoons minced garlic

4 cups coarsely chopped green cabbage

2 carrots, peeled, quartered, and sliced

4 cups beef broth

3 (8-ounce) cans tomato sauce

½ cup uncooked long-grain rice

1 bay leaf

3 tablespoons brown sugar

2 tablespoons parsley


Instructions

  • Sauté the beef and vegetables: Heat olive oil and butter in a large pot. Add ground beef and cook until browned, breaking it apart as it cooks. Season with salt and pepper. Add onion and garlic, cooking for 3-4 minutes until softened.

  • Add vegetables and broth: Stir in cabbage, carrots, and beef broth. Bring to a boil, then reduce to simmer.

  • Add tomato sauce and seasonings: Stir in tomato sauce, rice, bay leaf, brown sugar, and parsley. Simmer for 20-30 minutes until rice and cabbage are tender.

  • Adjust seasoning: Taste and adjust salt, pepper, or brown sugar.

  • Serve: Remove bay leaf and garnish with parsley. Serve with crusty bread.
