Ingredients

Butter

Red bell pepper, diced

Shrimp, peeled and deveined

Andouille sausage, sliced

Garlic, minced

Cajun seasoning

Water

Milk (2% or any type)

Old-fashioned grits

Parmesan cheese, grated

Chives or parsley (optional for garnish)


Instructions

  • Make the grits: In a pot, bring milk and water to a boil. Whisk in the grits, reduce heat to low, and simmer for about 15 minutes, stirring frequently. Add butter, Parmesan, salt, pepper, and garlic powder. Let sit until ready to serve.

  • Prepare the shrimp and sausage: In a skillet, heat olive oil and butter. Cook the red bell pepper for about 5 minutes, then add the sausage and cook for 3 minutes. Stir in garlic, followed by shrimp, lemon juice, and Cajun seasoning. Cook until shrimp turn pink, about 5 minutes.

  • Assemble: Serve the shrimp and sausage mixture over the creamy grits, adding some of the pan juices for extra flavor. Garnish with chives or parsley for a fresh finish.
