Description

Ingredients

  • 2 cups mashed potatoes (preferably chilled)
  • 3 large eggs, beaten

  • Salt and freshly ground black pepper, to taste
  • Cooking spray or butter (for greasing)

Optional Additions:

  • 1/2 teaspoon garlic powder or smoked paprika for extra flavor
  • 1/4 cup finely chopped vegetables (green onions, bell peppers, or spinach)

Instructions

  • Preheat the Oven:
    • Set oven to 400°F (200°C).
    • Lightly grease a mini muffin tin with cooking spray or butter.
  • Prepare the Mixture:
    • In a large bowl, mix together mashed potatoes, beaten eggs, cheddar cheese, Parmesan cheese, and chives.
    • Season with salt and black pepper to taste.
  • Fill the Muffin Tin:
    • Spoon the mixture into the prepared mini muffin cups, filling each about 3/4 full.
  • Bake the Puffs:
    • Place in the oven and bake for 20-25 minutes, or until golden brown and set.
  • Cool & Serve:
    • Let the puffs cool in the tin for about 5 minutes before removing.
