- Cooking spray or butter (for greasing)

Instructions
- Preheat the Oven:
- Set oven to 400°F (200°C).
- Lightly grease a mini muffin tin with cooking spray or butter.
- Prepare the Mixture:
- In a large bowl, mix together mashed potatoes, beaten eggs, cheddar cheese, Parmesan cheese, and chives.
- Season with salt and black pepper to taste.
- Fill the Muffin Tin:
- Spoon the mixture into the prepared mini muffin cups, filling each about 3/4 full.
- Bake the Puffs:
- Place in the oven and bake for 20-25 minutes, or until golden brown and set.
- Cool & Serve:
- Let the puffs cool in the tin for about 5 minutes before removing.
