Description

Cheesy Potato Croquettes are the ultimate comfort food, combining creamy mashed potatoes with gooey melted cheese, all encased in a crispy golden crust. Ingredients

  • 4 medium potatoes (Russet or Yukon Gold), peeled & cubed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ¼ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt & pepper to taste
  • Vegetable oil for frying

Instructions

1️⃣ Boil the Potatoes – Place peeled & cubed potatoes in a large pot of salted water. Boil until tender, about 15-20 minutes.
2️⃣ Mash the Potatoes – Drain & mash until smooth. Let cool slightly.
3️⃣ Prepare the Mixture – In a bowl, mix mashed potatoes with cheese, flour, eggs, salt, and pepper until uniform.
4️⃣ Shape the Croquettes – Form small oval or round patties (~2 inches).
5️⃣ Coat with Panko – Roll each patty in panko breadcrumbs until fully coated.
6️⃣ Fry the Croquettes – Heat oil in a deep skillet over medium heat. Fry in batches for 3 minutes per side until golden brown.
7️⃣ Drain & Serve – Place on paper towels to drain excess oil. Serve warm with your favorite dipping sauce.

Notes

  • Storage: Cool completely & store in an airtight container in the fridge for up to 3 days.
  • Freezing: Freeze on a baking sheet, then transfer to a freezer-safe bag. Store for up to 3 months.
  • Reheating:
    • Oven: 350°F (175°C) for 10-15 minutes.
    • Air Fryer: 375°F (190°C) for 6-8 minutes.
    • Avoid microwaving (it makes them soggy).
