Ingredients

1 pound breakfast sausage

6 eggs

1 cup half-and-half

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon onion powder

¼ teaspoon paprika

1 cup shredded colby jack cheese

1 cup shredded mozzarella cheese

2 tubes (8 rolls each) refrigerated crescent rolls

1 green onion, thinly sliced (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F and coat a 9×13-inch baking dish with non-stick spray.

  2. In a skillet, cook the breakfast sausage over medium-high heat, breaking it up as it cooks, until browned (about 6-8 minutes). Drain any excess grease and set aside.

  3. In a large mixing bowl, whisk together eggs, half-and-half, salt, pepper, onion powder, and paprika. Stir in the shredded cheeses.

  4. Unroll the crescent rolls and arrange 15 of them in the prepared baking dish in three rows (5 rolls per row).

Notes

For a vegetarian version, skip the sausage and add vegetables like spinach, bell peppers, or mushrooms.
