Description

Cheesy Stuffed Meatloaf Bites are a fun twist on classic meatloaf with a gooey cheddar cheese center and a tangy ketchup-mustard glaze. Ingredients

  • Ground Beef: 1 pound
  • Breadcrumbs: 1/2 cup
  • Milk: 1/4 cup
  • Large Egg: 1
  • Onion: 1 small, finely chopped
  • Garlic: 2 cloves, minced
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Worcestershire Sauce: 1 teaspoon
  • Ketchup: 1/2 cup
  • Mustard: 1 tablespoon
  • Grated Cheddar Cheese: 1/2 cup
  • Fresh Parsley: 1/4 cup, chopped (additional for garnish)

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce. Mix well.
  • Take a small portion of the meat mixture and flatten it in your hand. Place grated cheddar cheese in the center and mold the meat around it, sealing the cheese inside. Repeat with remaining meat and cheese.
  • In a small bowl, mix ketchup and mustard to create the glaze. Brush generously over each meatloaf bite.
  • Bake for 25-30 minutes, or until meatloaf bites reach an internal temperature of 160°F (71°C).
  • Garnish with fresh parsley and serve hot.

Notes

  • Ground turkey or chicken can be used as a leaner alternative to ground beef.
  • For different flavors, try using mozzarella, pepper jack, or another cheese variety.
  • These meatloaf bites can be frozen before baking. Just bake from frozen for 30-35 minutes.
