Chicken and Potato Bake is a one-pan comfort food classic featuring tender, juicy chicken breasts baked over golden, seasoned potatoes. Simple to prepare and bursting with flavor, this hearty dish is perfect for busy weeknights or cozy family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 medium potatoes, diced into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)
  • 1 cup shredded cheddar cheese (optional)
  • ¼ cup chopped fresh parsley (for garnish)

Instructions

Preheat and Prep:

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.

Season the Potatoes:

  1. In a large bowl, toss diced potatoes with 1 tbsp olive oil, garlic powder, onion powder, smoked paprika, oregano, thyme, salt, and pepper. Spread them evenly in the prepared baking dish.

Prepare the Chicken:

  1. Brush the chicken breasts with the remaining 1 tbsp olive oil. Sprinkle with salt, pepper, and a dash of paprika. Place the chicken on top of the potatoes.

Bake:

  1. Cover the dish with foil and bake for 30 minutes.
  2. Remove the foil, sprinkle the cheddar cheese over the potatoes (if using), and bake for another 15–20 minutes, until the chicken is cooked through (internal temperature of 165°F/74°C) and the potatoes are golden and tender.

Rest and Serve:

  1. Remove from the oven and let the dish rest for 5 minutes. Garnish with fresh parsley and serve. Pair with a green salad, roasted vegetables, or crusty bread for a complete meal.

Notes

  • Crispier Potatoes: Toss the potatoes halfway through baking or broil for the last 2–3 minutes for extra crispness.
  • Make Ahead: Season the chicken and potatoes in advance, store in the refrigerator, and assemble just before baking.
