Ingredients

  • Chicken thighs and drumsticks

Instructions

  • Season chicken thighs and drumsticks with salt and pepper.

  • Heat butter and olive oil in a deep skillet over medium heat.

  • Brown chicken thighs skin-side down for 3–4 minutes per side. Remove and set aside.

  • Brown the drumsticks in the same pan, then set aside.

  • In the same skillet, sauté celery, carrots, onion, and garlic until softened.

  • Stir in flour and cook for 1 minute.

  • Pour in chicken broth, white wine (if using), and add thyme and bay leaves.

  • Return chicken to skillet and simmer for 30 minutes.

  • Stir in heavy cream and cook an additional 5 minutes until sauce thickens.

  • Serve hot with mashed potatoes, rice, or crusty bread.
