Ingredients
- 3 large boneless, skinless chicken breasts, halved lengthwise
- Salt and freshly ground black pepper, to taste
- 1 cup all-purpose flour, divided
- 6 tbsp unsalted butter, divided
- 1 tbsp olive oil
- 1 medium onion, diced
- 8 oz fresh mushrooms, sliced
- 2 cloves garlic, minced
- ½ cup dry sherry or dry white wine
- 1 cup chicken broth
- 1 cup heavy cream
- 6 slices Muenster or Swiss cheese
- Fresh parsley, chopped, for garnish

Prepare the Chicken:
- Season chicken breasts with salt and pepper.
- Reserve 3 tbsp of flour, then dredge the chicken in the remaining flour, shaking off excess.

Sear the Chicken:
- Heat 3 tbsp butter and 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side, until golden brown.
- Transfer to a 9×13-inch baking dish.

Sauté the Vegetables:
- In the same skillet, melt the remaining 3 tbsp butter.
- Sauté onion and mushrooms for about 5 minutes, until tender.
- Add garlic and cook for 1 minute more.

Make the Sauce:
- Sprinkle in reserved 3 tbsp flour, stirring constantly for 1 minute.
- Gradually whisk in sherry (or white wine), chicken broth, and heavy cream.
- Bring to a simmer, letting it thicken slightly. Season with salt and pepper to taste.

Assemble the Casserole:
- Pour the creamy mushroom sauce over the chicken in the baking dish.
- Top each chicken breast with a slice of cheese.

- Cover the dish with foil and bake at 375°F (190°C) for 20 minutes.
- Remove foil and broil for 2-3 minutes until cheese is bubbly and golden brown.
