Description

Chicken Gloria is a rich and comforting casserole featuring tender chicken breasts, sautéed mushrooms, and a luscious creamy sauce, all topped with melted Muenster or Swiss cheese. This easy-to-make dish has been a family favorite for generations and pairs beautifully with rice, pasta, or steamed vegetables for a complete meal.


Ingredients

  • 3 large boneless, skinless chicken breasts, halved lengthwise
  • Salt and freshly ground black pepper, to taste
  • 1 cup all-purpose flour, divided
  • 6 tbsp unsalted butter, divided
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 8 oz fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup dry sherry or dry white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 6 slices Muenster or Swiss cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken:

    • Season chicken breasts with salt and pepper.
    • Reserve 3 tbsp of flour, then dredge the chicken in the remaining flour, shaking off excess.
  2. Sear the Chicken:

    • Heat 3 tbsp butter and 1 tbsp olive oil in a large skillet over medium-high heat.
    • Sear chicken for 3-4 minutes per side, until golden brown.
    • Transfer to a 9×13-inch baking dish.
  3. Sauté the Vegetables:

    • In the same skillet, melt the remaining 3 tbsp butter.
    • Sauté onion and mushrooms for about 5 minutes, until tender.
    • Add garlic and cook for 1 minute more.
  4. Make the Sauce:

    • Sprinkle in reserved 3 tbsp flour, stirring constantly for 1 minute.
    • Gradually whisk in sherry (or white wine), chicken broth, and heavy cream.
    • Bring to a simmer, letting it thicken slightly. Season with salt and pepper to taste.
  5. Assemble the Casserole:

    • Pour the creamy mushroom sauce over the chicken in the baking dish.
    • Top each chicken breast with a slice of cheese.
  6. Bake:

    • Cover the dish with foil and bake at 375°F (190°C) for 20 minutes.
    • Remove foil and broil for 2-3 minutes until cheese is bubbly and golden brown.
  7. Serve:

    • Garnish with fresh parsley and serve hot.
