Ingredients

Meatloaf:

  • 1 pound (453g) ground chicken

  • ½ cup (50g) panko breadcrumbs (gluten-free if needed)

  • ¼ cup (59ml) milk

  • ¼ cup (22.5g) grated Parmesan cheese

  • ½ cup (30g) fresh parsley, chopped

  • ¾ cup (39g) onion, chopped

  • 2 cloves garlic, minced

  • 1 large egg

  • ¼ cup (59ml) Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • ½ teaspoon ground pepper

  • ½ teaspoon ground nutmeg

Glaze:

  • ¼ cup (58.7g) ketchup

  • ¼ cup (50g) brown suga

  • ¼ cup (59ml) apple cider vinegar


Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  • In a large mixing bowl, combine ground chicken, panko breadcrumbs, milk, Parmesan cheese, parsley, onion, garlic, egg, Worcestershire sauce, thyme, salt, pepper, and nutmeg. Mix until well incorporated.

  • Transfer the meat mixture into a loaf pan or form a loaf shape on the prepared baking sheet.

  • In a separate small bowl, whisk together ketchup, brown sugar, and apple cider vinegar to make the glaze.

  • Brush the glaze generously over the top of the meatloaf.

  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).

  • Let the meatloaf rest for 10 minutes before slicing and serving.
