Description

Ingredients

1 lb boneless, skinless chicken breasts

4 cups chicken broth

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

1 tsp dried basil

1 tsp garlic powder

1/2 tsp red pepper flakes

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil for garnish


Instructions

  • Place the chicken breasts in the bottom of the Crockpot.

  • Add chicken broth, heavy cream, sun-dried tomatoes, dried basil, garlic powder, red pepper flakes, salt, and pepper.

  • Stir to combine the ingredients.

  • Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked and tender.

  • Remove chicken from the Crockpot and shred with two forks.

  • Return shredded chicken to the Crockpot and stir in grated Parmesan cheese.

  • Cook on high for an additional 10-15 minutes, until the sauce thickens slightly and the cheese is melted.

  • Garnish with fresh basil before serving.

Notes

Add spinach, mushrooms, or zucchini for extra texture and nutrition.

Swap chicken breasts for thighs for a richer flavor.

For a dairy-free version, use coconut milk and a plant-based Parmesan.

This dish can be paired with pasta, rice, or a fresh salad.
