Ingredients

  • 1 small bag fresh baby spinach
  • Dash of pepper
  • Dash of Herb and Garlic Seasoning
  • 8 oz shredded mozzarella cheese
  • 6 thin-sliced chicken breasts
  • 1 container green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
  • In the same skillet, add the spinach and sauté until wilted, about 2-3 minutes.
  • Add the green onion cream cheese and stir until melted into a creamy sauce. Season with pepper and herb and garlic seasoning.
  • Pour the chicken broth into the skillet and stir everything together.
  • Place the cooked chicken breasts back into the skillet and spoon the spinach mixture over the chicken.
  • Sprinkle shredded mozzarella cheese over the chicken and spinach.
  • Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven, let it cool slightly, and serve hot.
