Description

Chinese Tomato Egg Stir Fry is a quick and easy dish that combines fluffy scrambled eggs, juicy tomatoes, and a savory sauce for a comforting and flavorful meal. Ready in just 10 minutes, this dish is perfect for busy weeknights or as a light snack.


Ingredients

4 large eggs

Salt and white pepper, to taste

2 cloves garlic, minced

2 green onions, chopped

4 Roma tomatoes, chopped

2 tablespoons ketchup

1 tablespoon oyster sauce

1 tablespoon soy sauce

1 teaspoon brown sugar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water

1 tablespoon vegetable oil for cooking


Instructions

  1. Prepare the eggs: Whisk the eggs in a bowl with salt and white pepper. Set aside.

  2. Scramble the eggs: Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add the eggs and scramble gently until soft and slightly runny. Remove from the pan and set aside.

  3. Cook the aromatics: In the same pan, heat the remaining tablespoon of oil. Add garlic and green onions, and sauté until fragrant.

  4. Add the tomatoes: Stir in the chopped tomatoes and cook for 2-3 minutes until softened.

  5. Make the sauce: In a small bowl, mix together ketchup, oyster sauce, soy sauce, brown sugar, and cornstarch-water mixture. Add the sauce to the pan and stir to combine.

  6. Combine: Add the scrambled eggs back into the pan and gently stir to coat with the sauce. Drizzle with sesame oil and cook for another minute. Serve hot.

Notes

Make it Vegan: Replace the eggs with tofu and use a vegan-friendly oyster sauce alternative.

Add Protein: You can add cooked chicken, or shrimp to make it a heartier meal.

Customize the Spice: Add chili flakes or chili oil for a spicy kick.
