- 3 cups quick cooking oats
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter

- In a large saucepan, melt the butter over medium heat. Stir in brown sugar and vanilla extract. Add the oats and cook over low heat for 2-3 minutes, stirring until well mixed.
- Press half of the oat mixture into the bottom of the prepared pan. Set aside the remaining half for the topping.
- In a small saucepan, melt the chocolate chips and peanut butter together over low heat, stirring frequently until smooth.
- Pour the chocolate mixture over the oat layer in the pan, spreading it evenly.
- Crumble the remaining oat mixture over the chocolate layer and gently press it down.
- Cover the pan and refrigerate for 2-3 hours or overnight. Let them come to room temperature before cutting into bars.
Notes
- Use almond butter or cashew butter instead of peanut butter for a different flavor.
- Add-ins like raisins, dried cranberries, or chopped nuts can be mixed in for extra texture.
- For a richer flavor, try using dark chocolate chips instead of semisweet.
