Description

These no-bake chocolate oat bars are a quick and indulgent treat made with oats, semisweet chocolate, and peanut butter. They come together in just a few minutes and chill in the fridge for a chewy, sweet snack that’s perfect for any occasion. No baking required!


Ingredients

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter

Instructions

  • Grease a 9×9 inch square pan.
  • In a large saucepan, melt the butter over medium heat. Stir in brown sugar and vanilla extract. Add the oats and cook over low heat for 2-3 minutes, stirring until well mixed.
  • Press half of the oat mixture into the bottom of the prepared pan. Set aside the remaining half for the topping.
  • In a small saucepan, melt the chocolate chips and peanut butter together over low heat, stirring frequently until smooth.
  • Pour the chocolate mixture over the oat layer in the pan, spreading it evenly.
  • Crumble the remaining oat mixture over the chocolate layer and gently press it down.
  • Cover the pan and refrigerate for 2-3 hours or overnight. Let them come to room temperature before cutting into bars.

Notes

  • Use almond butter or cashew butter instead of peanut butter for a different flavor.
  • Add-ins like raisins, dried cranberries, or chopped nuts can be mixed in for extra texture.
  • For a richer flavor, try using dark chocolate chips instead of semisweet.
