Ingredients

For the Salad:

8 ounces pasta (rotini, penne, or bowtie)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, diced

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

For the Dressing:

1/4 cup olive oil

2 tablespoons fresh lime juice

1 tablespoon lime zest

1 tablespoon honey

1 teaspoon ground cumin

1/4 teaspoon chili powder

Salt and pepper to taste


Instructions

  • Cook the Pasta: Cook pasta according to package instructions. Drain and rinse under cold water to cool.
