Description

This moist and tender cinnamon apple cake is packed with fresh apples, warm spices, and topped with a crunchy cinnamon-sugar layer and light glaze. Easy to make and incredibly flavorful, it’s perfect for fall baking or any cozy occasion.


Ingredients

Cake:

1½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

¾ cup granulated sugar

1 cup peeled and roughly chopped red apple (approx. 1 large apple)

2 large eggs

1 teaspoon vanilla extract

½ cup vegetable oil

½ cup Greek yogurt

Cinnamon Topping:

¼ cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon melted butter

Glaze:

¼ cup powdered sugar, sifted

12 tablespoons milk


Instructions

  • Preheat oven to 350°F (180°C). Grease and line an 8-inch round cake pan.

  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

  • Stir chopped apple into the dry mixture.

  • In another bowl, whisk eggs, vanilla, oil, and Greek yogurt until smooth.

  • Combine wet and dry ingredients just until mixed. Do not overmix.

  • Pour batter into prepared pan and smooth the surface.

  • Mix topping ingredients and sprinkle evenly over the batter.

  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Drizzle glaze over the cooled cake before serving.

Notes

For extra crunch, add ½ cup chopped walnuts or pecans to the batter.

Swap apples for pears or peaches for a fruity twist.

Don’t overmix the batter to maintain a tender crumb.

Glaze is optional—dusting with powdered sugar also works well.
