Ingredients

Dry Ingredients:

2 cups all-purpose flour

1 ¼ cups granulated sugar, divided

3 teaspoons baking powder

3 ½ teaspoons ground cinnamon, divided

1 ¼ teaspoons salt

Wet Ingredients:

2 large eggs

1 cup buttermilk

⅓ cup vegetable oil

1 teaspoon vanilla extract

½ teaspoon almond extract

Add-ins:

1 cup chopped pecans

For the glaze:

1 cup powdered sugar

2 tablespoons melted butter

½ teaspoon vanilla extract

2 to 3 tablespoons milk


Instructions

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.

  2. In a large bowl, whisk together flour, 1 cup of sugar, baking powder, 1 ½ teaspoons cinnamon, and salt.

  3. In a separate bowl, whisk eggs, buttermilk, oil, vanilla extract, and almond extract until smooth.

  4. Combine wet and dry mixtures just until incorporated. Do not overmix.

  5. Fold in chopped pecans and gently fold in raspberries if using (optional variation).

  6. Pour half the batter into the loaf pan. In a small bowl, mix remaining ¼ cup sugar, remaining cinnamon, and half the pecans. Sprinkle over batter and swirl lightly with a knife.

  7. Top with remaining batter and sprinkle the rest of the cinnamon-pecan mixture over the top.

  8. Bake for 55–60 minutes or until a toothpick comes out clean. Cool for 10 minutes in the pan before removing.

  9. Whisk glaze ingredients together and drizzle over cooled loaf. Garnish with more pecans if desired.

Notes

Substitute walnuts or almonds for pecans if preferred.

Omit almond extract if you’re not a fan, or increase vanilla.

Add diced apples or raisins for extra sweetness and texture.
