Ingredients

For the Macaron Shells:

1 ½ cups almond flour

2 large egg whites

For the Coffee Buttercream:

½ cup butter, softened

1 ½ cups powdered sugar

1 ½ tablespoons instant coffee

2 tablespoons heavy cream

For the Topping:

2 tablespoons melted chocolate (optional, for drizzling)


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone mat.

  2. Sift together almond flour, powdered sugar, and instant coffee or espresso powder into a bowl.

  3. In a separate bowl, beat egg whites with granulated sugar and a pinch of salt until stiff peaks form (approximately 6-8 minutes).

  4. Gently fold the sifted dry ingredients into the egg whites, mixing until the batter reaches a smooth, lava-like consistency.

  5. Pipe 1.5-inch circles onto the prepared baking sheet. Tap the pan to remove air bubbles. Bake at 300°F (150°C) for 17-19 minutes.

  6. Let the macarons cool completely before pairing shells of similar sizes.

  7. For the buttercream, beat butter, powdered sugar, instant coffee, and heavy cream until smooth and creamy.

  8. Pipe the coffee buttercream onto one macaron shell and sandwich it with a matching shell.

  9. Optional: Drizzle with melted chocolate for a decadent finish.

  10. For best flavor, refrigerate the macarons for 2-3 days before serving.
