Description

These Cottage Cheese Banana Oat Protein Pancake Bites are a delicious and nutritious way to start your day or fuel up for a workout. Packed with protein, natural sweetness, and wholesome oats, they’re a perfect on-the-go breakfast or snack.

Ingredients

1 ripe banana

½ cup cottage cheese

2 large eggs

¾ cup rolled oats

½ teaspoon baking powder

¼ teaspoon cinnamon

¼ teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line with paper liners.

  • In a blender or food processor, combine the ripe banana, cottage cheese, eggs, oats, baking powder, cinnamon, and vanilla extract. Blend until smooth.

  • Pour the batter evenly into the muffin tin, filling each cup about ¾ full.

  • Bake for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.

  • Let cool for a few minutes before removing from the tin.

  • Serve immediately or store in an airtight container for later.

Notes

Add-ins like chocolate chips, berries, or chopped nuts can be incorporated for extra flavor.

For a richer taste, add a tablespoon of peanut butter or a pinch of nutmeg.

Use a dairy-free alternative like Greek yogurt or a dairy-free cottage cheese substitute for a dairy-free option.
