Ingredients
1½ cups cottage cheese
4 eggs
1 cup sautéed spinach + chopped onion
A pinch of nutmeg
½ cup shredded mozzarella
Instructions
-
Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a pie dish or similar-sized baking dish.
-
Prepare the spinach mixture: Sauté spinach and chopped onion in olive oil over medium heat for 5 minutes until softened and wilted. Set aside to cool slightly.
-
Mix the egg base: Whisk cottage cheese, eggs, and a pinch of nutmeg together in a large bowl until smooth and fully combined.
-
Combine and add mozzarella: Stir in the sautéed spinach and onion mixture. Fold in shredded mozzarella.
-
Bake the quiche: Pour the mixture into the prepared pie dish, smoothing the top. Bake for 30-35 minutes, until golden brown on top and set in the center.
-
Cool and serve: Let the quiche cool for 5 minutes before slicing. Serve warm or at room temperature.
Notes
Add other sautéed vegetables like bell peppers or mushrooms for extra flavor and texture.
