Ingredients

8 ounces Rotini Pasta, cooked according to package instructions

8 ounces Imitation Crab, flake style, chopped

2 Celery Ribs, diced

1 medium Bell Pepper, green or red

½ cup Light Mayonnaise

Instructions

  • Cook the rotini pasta according to package instructions. Drain and set aside to cool.

  • While pasta cools, chop the imitation crab into bite-sized pieces. Dice the celery and bell pepper.

  • In a large mixing bowl, combine the cooled pasta, imitation crab, celery, and bell pepper.

  • Add light mayonnaise to the bowl and stir to combine. Ensure everything is evenly coated with mayo.

  • Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

  • Stir the salad before serving.

Notes

Add Protein: Boost the salad with cooked shrimp, chicken, or tuna.

Spice it up: Add Dijon mustard or hot sauce for a little heat.

Swap Mayo: Use Greek yogurt or a vegan mayo for a healthier alternative.

Herb Twist: Fresh dill, parsley, or basil can elevate the flavor.
