Description

These Orange Almond Energy Bites are a healthy and delicious snack made with Medjool dates, almonds, oats, and dried cranberries. Ingredients

For the Energy Bites:

  • 1 cup pitted Medjool dates (about 1012 dates)
  • 1 cup whole raw almonds
  • 2/3 cup dried cranberries
  • 2/3 cup old-fashioned oats
  • 1/2 cup shredded coconut
  • 2 tbsp ground flax seed
  • 1 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • Zest of 1 orange + 2 tbsp orange juice

Optional Orange-Coconut Coating:

  • 1/4 cup shredded coconut
  • Zest of 1 orange

Instructions

  • Prepare the Ingredients: In a food processor, combine the Medjool dates, almonds, cranberries, oats, shredded coconut, flax seed, vanilla extract, sea salt, orange zest, and orange juice. Pulse until finely chopped and the mixture sticks together.

  • Form the Bites: Scoop tablespoon-sized portions of the mixture and roll them into balls with your hands. Place the bites on a parchment-lined tray.

  • Optional Coating: If desired, combine shredded coconut and orange zest in a small bowl. Roll each energy bite in the mixture for an extra zesty coating.

  • Chill: Refrigerate the energy bites for at least 30 minutes to firm up.

  • Serve: Once chilled, store the bites in an airtight container in the refrigerator for up to 1 week.
