Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup full-fat Greek yogurt
- 4 ounces light cream cheese, softened
- 3 tablespoons ranch seasoning (homemade or store-bought)
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ¼ cup fresh parsley, chopped
- Salt and pepper, to taste
- Optional fresh herbs (dill, chives) for garnish
Instructions
- Prepare the Chicken: Pat chicken breasts dry with paper towels and season with salt and pepper.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden brown. Remove from pan and set aside.
- Make the Sauce: Reduce heat to medium-low. Add minced garlic and cook for 30 seconds until fragrant. Pour in chicken broth, scraping up any browned bits.
- Combine Ingredients: Whisk in Greek yogurt, cream cheese, and ranch seasoning until smooth.
- Simmer: Return the chicken to the skillet, cover, and simmer for 7-10 minutes until chicken reaches an internal temperature of 165°F.
- Finish and Serve: Stir in fresh parsley and adjust seasoning to taste. Garnish with additional fresh herbs if desired.
Notes
- Variations: Make it spicy by adding red pepper flakes, or swap out dairy for coconut yogurt and dairy-free cream cheese.
- Storage/Reheating: Store leftovers in an airtight container for up to 3-4 days. Reheat gently on the stovetop with a splash of broth.
- Freezing: Freeze cooked chicken without sauce for up to 3 months.
