Ingredients

2 tablespoons olive oil

1 large carrot, sliced into coins

1 pound ground turkey (or Italian sausage)

4 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1 can (28 ounces) crushed tomatoes

4 cups chicken broth

1 package (20 ounces) fresh cheese ravioli

6 cups fresh baby spinach

2 cups half-and-half (or heavy cream)

½ cup Parmesan cheese, grated (plus more for garnish)


Instructions

  • Sauté the vegetables: Heat olive oil and butter in a large pot. Add onion and carrot. Cook for 5-7 minutes until softened.

  • Cook the meat: Add ground turkey (or sausage), season with salt and pepper. Cook for 8-10 minutes until browned.

  • Add garlic and herbs: Stir in garlic, basil, and oregano. Cook for 1-2 minutes until fragrant.

  • Add tomatoes and broth: Pour in crushed tomatoes and chicken broth. Stir and simmer for 10 minutes.

  • Add ravioli: Stir in ravioli and cook for 4-5 minutes, or until tender.

  • Stir in spinach and cream: Add spinach, cream, and Parmesan cheese. Stir and simmer for 2-3 minutes until creamy.
