Description

This Crockpot Beef Tips & Noodles recipe features tender, slow-cooked beef in a rich, savory sauce, served over buttery egg noodles. A perfect comfort food for busy weeknights, this easy slow cooker meal is packed with flavor and requires minimal prep.

Ingredients

  • 1.5 lbs beef stew meat (beef tips)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup soy sauce
  • ¼ cup Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ cup heavy cream
  • 1 cup frozen peas (optional)
  • 8 oz egg noodles
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions

  • Prepare the Beef: Place beef stew meat in the slow cooker. Add chopped onion and minced garlic.
  • Make the Sauce: In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, Dijon mustard, dried thyme, and black pepper. Pour over the beef.
  • Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until beef is tender.
  • Cook the Noodles: About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.
  • Thicken the Sauce (Optional): If a thicker sauce is desired, mix 2 tablespoons cornstarch with 2 tablespoons cold water to create a slurry. Stir it into the slow cooker and cook on high for 15-20 minutes until thickened.
  • Combine & Serve: Stir in heavy cream and frozen peas (if using). Cook for 10 more minutes, then toss in the cooked egg noodles. Serve warm and enjoy!

Notes

  • Make It Spicy: Add red pepper flakes or a dash of hot sauce.
  • Mushroom Lover’s Version: Add sliced mushrooms in the last hour of cooking.
  • Dairy-Free Option: Replace heavy cream with coconut milk or omit it.
  • Extra Hearty: Serve over mashed potatoes instead of noodles.
  • Wine for Depth: Add ¼ cup red wine for extra richness.
