Description

Ingredients

4 cups broccoli florets

1 onion, diced

4 cups chicken broth

1 tsp onion powder

Salt and pepper, to taste

1 cup heavy cream

2 cups shredded cheddar cheese


Instructions

  1. Place broccoli, onion, chicken broth, garlic powder, onion powder, salt, and pepper into the Crockpot.

  2. Cook on low for 4-6 hours, or until broccoli is tender.

  3. Use an immersion blender to partially blend the soup, leaving some broccoli chunks for texture.

  4. Stir in heavy cream and shredded cheddar cheese.

  5. Cook on high for an additional 10 minutes until cheese is melted and the soup is creamy.

  6. Serve hot with freshly cracked black pepper.

Notes

For a vegetarian version, use vegetable broth instead of chicken broth.
