Description

These Crockpot Chicken Tacos are a healthy and flavorful slow cooker meal made with tender shredded chicken, bold spices, and salsa. Easy to prep and perfect for meal prep, these tacos are high-protein, low-calorie, and customizable with your favorite toppings.


Ingredients

For the Chicken:

2 lbs boneless, skinless chicken breasts

1 yellow onion, finely chopped

4 garlic cloves, minced

16 oz chunky salsa

Juice of ½ lime

2 tsp paprika

2 tsp ground cumin

¼ tsp chili powder

½ tsp ground coriander

½ tsp sea salt

¼ tsp black pepper

For Serving:

12 tortillas (e.g., low-carb or corn)

2 avocados, mashed

4 tbsp sour cream (or dairy-free alternative)

1 lime, sliced

Fresh cilantro, chopped


Instructions

  1. Add chicken breasts to the slow cooker.

  2. Top with onion, garlic, salsa, lime juice, and all spices. Mix to coat evenly.

  3. Cook on high for 3 hours or low for 6 hours.

  4. Once cooked, shred chicken using two forks.

  5. Mix shredded chicken into the juices and cook for 1 additional hour with the lid slightly ajar.

  6. Serve in warm tortillas with avocado, sour cream, lime, and cilantro.

Notes

Use chicken thighs for richer flavor.

For extra heat, add jalapeños or increase chili powder.
