Ingredients
1 lb boneless, skinless chicken breasts
6 cups chicken broth
1/2 cup long-grain rice
1 lemon, juiced and zested
1 onion, diced
2 garlic cloves, minced
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley and lemon slices for garnish
Instructions

Place chicken breasts in the bottom of the Crockpot.

Add chicken broth, rice, lemon juice, lemon zest, diced onion, minced garlic, dried thyme, salt, and pepper.

Stir to combine.

Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked and rice is tender.

Remove chicken and shred with two forks.

Return shredded chicken to the Crockpot and stir. Taste for seasoning and add more salt, pepper, or lemon juice if desired.

Notes
