Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 4 slices of Swiss cheese
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (panko recommended)
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp butter
For the Creamy Sauce:
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 tsp Dijon mustard
- 1 tsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Pound each chicken breast to ½ inch thick and season with salt and pepper.
- Lay a slice of Swiss cheese on each chicken breast. Fold over and secure with toothpicks.
- Dredge the stuffed chicken in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat olive oil and butter in a skillet over medium heat. Brown each chicken breast for 3-4 minutes per side.
- Transfer to a baking dish and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- For the sauce: In the same skillet, sauté garlic, then add chicken broth, heavy cream, and Dijon mustard. Simmer for about 5 minutes until thickened.
- Remove toothpicks from chicken and serve with sauce, garnished with parsley.
