Ingredients

2 lbs chicken breasts

1 cup chicken broth

1 packet taco seasoning

2 teaspoons garlic, minced

2 bell peppers, sliced

1 onion, sliced

1 lime, for garnish

Fresh parsley (optional)

Tortillas for serving


Instructions

  • Add chicken breasts, chicken broth, taco seasoning, and garlic to the Instant Pot.

  • Top with sliced bell peppers and onions.

  • Lock the lid, turn the valve to the sealed position, and set the Instant Pot to Manual/High Pressure for 7 minutes.

  • Allow a 5-minute natural pressure release, followed by a quick release.

  • Remove the peppers and onions, then shred the chicken.

  • Squeeze lime over the chicken and garnish with parsley.

  • Serve with tortillas and your favorite toppings.

Notes

For a leaner version, substitute ground chicken or turkey.
