Description

This Easy Keto Creamed Spinach is a rich, creamy, and low-carb side dish perfect for keto enthusiasts. Made with fresh spinach, butter, garlic, sour cream, and a touch of nutmeg, this dish is indulgent yet quick to prepare. Ingredients

  • 16 oz baby spinach leaves, washed and dried

  • 1/3 cup unsalted butter, divided

  • 1 onion, chopped

  • 2 cloves garlic, finely chopped or minced

  • 1 cup sour cream

  • 1/3 tsp ground nutmeg

  • 1/3 tsp black pepper

  • Pinch of salt


Instructions

  • Bring a large pot of water to a boil and add 2 teaspoons of salt.

  • Add the spinach and cook for about 1 minute, just until wilted.

  • Drain the spinach in a strainer or colander and rinse with cold water until cool. Squeeze out the excess water from the spinach.

  • Chop the spinach into roughly 3/4-inch strips.

  • In a large skillet, melt butter and sauté the garlic and onions over medium-low heat for 8-10 minutes, until the onions become translucent.

  • Add salt, black pepper, and nutmeg to the skillet.

  • Stir in the chopped spinach and cook until well combined.

  • Add the sour cream and cook for an additional 6 minutes, stirring occasionally.

Notes

  • For extra richness, substitute half the sour cream with heavy cream.

  • Add a pinch of cayenne pepper for a mild heat.

  • Grated Parmesan cheese can be mixed in for extra texture.

  • Frozen spinach can be used—just ensure it’s thawed and excess water squeezed out.
