Ingredients

16 oz baby spinach leaves, washed and dried

1/3 cup unsalted butter, divided

1 onion, chopped

2 cloves garlic, finely chopped or minced

1 cup sour cream

1/3 tsp ground nutmeg

1/3 tsp black pepper

Pinch of salt
Instructions

Bring a large pot of water to a boil and add 2 teaspoons of salt.

Add the spinach and cook for about 1 minute, just until wilted.

Drain the spinach in a strainer or colander and rinse with cold water until cool. Squeeze out the excess water from the spinach.

Chop the spinach into roughly 3/4-inch strips.

In a large skillet, melt butter and sauté the garlic and onions over medium-low heat for 8-10 minutes, until the onions become translucent.

Add salt, black pepper, and nutmeg to the skillet.

Stir in the chopped spinach and cook until well combined.

Add the sour cream and cook for an additional 6 minutes, stirring occasionally.
