Ingredients

1 whole grain tortilla

2 eggs

1/2 avocado, sliced

Fresh parsley, chopped

12 slices mozzarella, thinly sliced

Instructions

  • Whisk the eggs in a bowl until well combined.

  • Heat a pan over medium heat and add a few drops of olive oil.

  • Pour the eggs into the pan and scramble until cooked through, about 2-3 minutes.

  • Place the tortilla on a flat surface and add the scrambled eggs to one half.

  • Top with mozzarella slices, fresh parsley, and avocado slices.

  • Fold the tortilla over to create a half-moon shape.

  • Toast the quesadilla in the pan or on a griddle for 1-2 minutes on each side until the mozzarella melts and the tortilla is golden and crispy.

  • Serve immediately and enjoy!

Notes

Add Vegetables: Enhance your quesadilla with sautéed spinach, bell peppers, or onions.

Spicy Kick: Spice things up with hot sauce or chili flakes.

Cheese Swap: Use cheddar, gouda, or feta if mozzarella isn’t your preference.

Herb Variation: Experiment with cilantro or basil for a fresh twist.
