4 ounces cream cheese (1/2 block)

1/2 cup pepper jack cheese, shredded

11/2 cups shredded cooked chicken

3/4 cup corn (fresh, frozen, or fresh)

2 tablespoons chopped cilantro

2 refrigerated pie crusts (1 box)

2 tablespoons egg whites (to brush on empanada dough)


Instructions

  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add chopped onion and minced garlic, sautéing until softened, about 3-4 minutes.

  • Stir in chipotle chiles with adobo sauce and combine.

  • Add cream cheese, pepper jack cheese, and shredded chicken. Stir until melted and well combined.
