Description

This Fish Florentine recipe features tender white fish fillets baked atop a creamy, garlicky spinach base for an elegant yet easy dish. With its rich flavors and velvety texture, it’s perfect for both weeknight dinners and special occasions. Using firm white fish like cod, haddock, or flounder, this dish is high in protein, low in carbs, and naturally gluten-free. Serve it with rice, roasted potatoes, or a fresh salad for a complete meal.

Ingredients

  • 4 firm white fish fillets (cod, haddock, or flounder)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 10 oz fresh spinach, washed and chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp ground nutmeg
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Preheat Oven: Set oven to 400°F (200°C) and lightly grease a baking dish.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Sauté onion for 3-4 minutes until translucent, then add garlic and cook for another minute.
  3. Cook Spinach: Add chopped spinach and cook until wilted (about 2-3 minutes).
  4. Prepare Creamy Base: Stir in heavy cream, Parmesan cheese, nutmeg, salt, and pepper. Simmer for 2 minutes until slightly thickened.
  5. Assemble Dish: Spread the creamy spinach evenly in the baking dish. Place fish fillets on top and season with salt and pepper.
  6. Bake: Cook in the oven for 15-20 minutes, or until the fish flakes easily with a fork.
  7. Serve: Let rest for 2 minutes, then serve warm with lemon wedges if desired.

Notes

  • Cheese Lovers: Add mozzarella or Gruyère before baking for extra cheesiness.
  • Herb Infusion: Mix in fresh dill or parsley for a fresh flavor boost.
  • Low-Fat Option: Swap heavy cream for half-and-half or a light cream.
  • Seafood Mix: Add shrimp or scallops for a delicious seafood medley.
