Description
Cloud bread is a light and fluffy, low-carb, gluten-free bread alternative perfect for keto and gluten-free diets. Easy to make with only a few ingredients, it can be customized with savory or sweet flavors. These soft “buns” are versatile and ideal for sandwiches, burgers, or enjoying on their own.
Ingredients
1 cup full-fat cottage cheese (drained if very watery)
3 large eggs, separated
½ tsp cream of tartar
1 tsp baking powder
Salt, to taste
Optional Add-Ins:
Savory: Garlic powder, herbs, Everything Bagel seasoning
Sweet: Vanilla extract, cinnamon, honey
Instructions

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

Whisk the egg whites with cream of tartar until stiff peaks form.

In a separate bowl, whisk egg yolks, cottage cheese, baking powder, and salt until smooth.

Gently fold the egg whites into the yolk mixture.

If desired, add any optional seasonings or sweeteners.

Spoon the mixture onto the baking sheet to form small mounds (6–8 buns).

Bake for 25–30 minutes until golden brown and firm to the touch.

Let cool on a wire rack before serving.
Notes
Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.
Can be frozen for up to 3 months; reheat in the oven or toaster.
