Description

Cloud bread is a light and fluffy, low-carb, gluten-free bread alternative perfect for keto and gluten-free diets. Easy to make with only a few ingredients, it can be customized with savory or sweet flavors. These soft “buns” are versatile and ideal for sandwiches, burgers, or enjoying on their own.


Ingredients

1 cup full-fat cottage cheese (drained if very watery)

3 large eggs, separated

½ tsp cream of tartar

1 tsp baking powder

Salt, to taste

Optional Add-Ins:

Savory: Garlic powder, herbs, Everything Bagel seasoning

Sweet: Vanilla extract, cinnamon, honey


Instructions

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

  • Whisk the egg whites with cream of tartar until stiff peaks form.

  • In a separate bowl, whisk egg yolks, cottage cheese, baking powder, and salt until smooth.

  • Gently fold the egg whites into the yolk mixture.

  • If desired, add any optional seasonings or sweeteners.

  • Spoon the mixture onto the baking sheet to form small mounds (6–8 buns).

  • Bake for 25–30 minutes until golden brown and firm to the touch.

  • Let cool on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.

Can be frozen for up to 3 months; reheat in the oven or toaster.

Optional: Add herbs, garlic powder, cinnamon, or vanilla extract for custom flavors.
