Description

Ingredients

For the egg mixture:

6 eggs

¼ cup parmesan cheese, grated

¼ cup heavy cream

Salt and pepper, to taste

Cheddar cheese, shredded (for topping)

Green onion, chopped (for topping)


Instructions

  1. Preheat your oven to 170°F and let it preheat for 20–25 minutes.

  2. Lightly grease a muffin tin or line with paper liners.

  3. In a large bowl, whisk together eggs, parmesan, heavy cream, salt, and pepper until well combined.

  4. Pour the mixture evenly into the muffin tin, filling each about three-quarters full.

  5. Top each cup with shredded cheddar and chopped green onions.

  6. Bake for 20–25 minutes, or until fully set and lightly golden.

  7. Let cool for a few minutes, then remove from the tin and serve warm.

Notes

Store in an airtight container in the fridge for up to 4 days.

Reheat in the microwave (30–45 seconds) or in the oven at 300°F.

Freeze for up to 3 months; wrap individually and store in a freezer-safe container.
