Ingredients
For the egg mixture:
6 eggs
¼ cup parmesan cheese, grated
¼ cup heavy cream
Salt and pepper, to taste
Cheddar cheese, shredded (for topping)
Green onion, chopped (for topping)
Instructions

Preheat your oven to 170°F and let it preheat for 20–25 minutes.

Lightly grease a muffin tin or line with paper liners.

In a large bowl, whisk together eggs, parmesan, heavy cream, salt, and pepper until well combined.

Pour the mixture evenly into the muffin tin, filling each about three-quarters full.
